Leek quiche

Obviously, my leek quiche has been a hit many a time though I am e personally rather embarrassed about it. I make it so often only because it is so simple and is done in a wink of an eye.
Leek Quiche à la Raji
filo pastry
6 medium-size leek
100g ham or bacon bits (optional)
1/2 litre cream
3 small eggs
100g shredded cheese
salt and pepper to taste (careful if already adding ham or bacon)

Line quiche/baking tray, dish or pan with filo pasty (pie crusts) sheet. Depending on the size of your dish 2 sheets might be needed.
Wash and chop 6 medium-size leek. Dry with paper towels and set aside. In a pan, add 100g chopped  ham or bacon and saute till crisp. Throw in chopped and drained leek and saute till soft. Set aside to cool.
In a bowl, whisk eggs cream and cheese and set aside. Add a sprinkle of nutmeg and cumin to give flavour.
Fill lined dish with cooled leek and ham/bacon mixture, pour in egg mixture and bake for 30 min in a pre-heated oven at 180°C.
Best eaten when warm. Serve with white wine.
